Casablanca – As the days of Ramadan pass, it’s easy to feel like we’ve exhausted all our ftour ideas, preparing the same dishes over and over. The routine can start to feel repetitive, and we often crave something new to refresh our meals.
This red lentil pizza is the perfect solution. A different, creative, and especially healthy recipe to break the monotony while keeping your ftour nourishing and satisfying.
Ingredients
Crust
1 cup red lentils (washed and drained)
1 cup water
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder (optional)
Dried oregano
Mixed Italian herbs
Toppings
Tomato sauce
Vegetables: bell peppers, mushrooms, spinach, zucchini, cherry tomatoes
Cheese
Grilled chicken, chopped or sliced
Instructions
Cook the lentils: In a small pot, combine red lentils and water. Bring to a boil, then simmer for 10–12 minutes until soft. Drain any excess water.
Blend: Transfer cooked lentils to a blender. Add olive oil, salt, garlic powder, and herbs. Blend until smooth.
Form the crust: Preheat the oven to 200°C. Line a baking tray with parchment paper. Spread the lentil mixture into a thin, even round or rectangle.
Pre-bake: Bake for 15–20 minutes until firm and slightly golden.
Spread a thin layer of tomato sauce over the pre-baked lentil crust.
Add your veggies, protein, and cheese.
Bake again at 180°C for 10–15 minutes until the toppings are cooked and the cheese is melted.
