Ingredients

400 ml milk

400 ml heavy cream

80g sugar

1 vanilla pod (or vanilla extract)

3 gelatin sheets

For the coulis

Fruits of your choice (Strawberries, Raspberries, Mango, etc)

Sugar or honey

A few drops of lemon juice

1 gelatin sheet

How to make it

Start by preparing the gelatin. Place it in cold water and let it soften until it becomes fully hydrated.

In a saucepan, combine the milk, cream, sugar, and vanilla. Warm the mixture gently over medium heat. The goal is warmth, not boil. Just enough for everything to blend into a smooth, fragrant base.

Once the mixture is hot and the sugar has fully dissolved, remove it from the heat. Add the prepared gelatin after gently squeezing out any excess water and stir until it disappears completely into the cream.

Pour the mixture into small bowls. Let them cool slightly, then transfer to the fridge. Leave them to set for at least a few hours, until the texture becomes firm.

For the coulis, blend your desired fruit until smooth. Transfer to a small saucepan with sugar or honey and a few drops of lemon juice.

Warm gently for a few minutes before adding the softened gelatin sheet. Stir until fully dissolved, then let it cool slightly.

Once the panna cotta has set, pour the coulis gently on top. Return to the fridge briefly so the surface sets lightly before serving.
