Ingredients

1 liter milk

4 tbsp sugar (adjust to taste)

4 tbsp cornstarch (maïzena)

1 tsp orange blossom water (or rose water)

1 tbsp butter

1 tsp vanilla

To garnish: crushed pistachios, almonds…

Instructions

Whisk the cornstarch into a small amount of milk before turning on the heat. This step is essential for achieving a perfectly smooth texture later on, without any lumps disrupting the creaminess of the final dessert. 

Once the mixture is fully dissolved, add the remaining milk along with the sugar. Whisk again until everything comes together into a uniform liquid.

Place the saucepan over medium heat and stay nearby. Stir continuously as the mixture gradually warms and begins to thicken. 

Remove from the heat and add orange blossom water or rose water, along with a touch of vanilla. This final addition defines the flavor, bringing a clean floral note that completes the pudding.

Pour into small cups or bowls and leave to set at room temperature before transferring to the refrigerator for a few hours until fully set.

Before serving, finish with a simple garnish of crushed pistachios, a light dusting of cinnamon, or a few chopped nuts for texture and contrast.
