Rabat – There are days when a cookie sounds perfect. Then there are days when only a fudgy brownie will do. And apparently, choosing between the two is now an unnecessary hardship.

Enter the browkie, the unofficial love child of a brownie and a chocolate chip cookie. Crispy around the edges, soft in the middle, chocolatey without requiring an entire afternoon in the kitchen, it is exactly the kind of winter treat that makes a cup of coffee feel like an event.

The best part? You don’t need complicated equipment or impressive baking skills. 

Ingredients 

For the brownie mixture:

  • 100g dark chocolate
  • 60g butter
  • 80g sugar
  • 1 egg
  • 60g flour
  • 1 tablespoon cocoa powder
  • ½ teaspoon baking powder
  • A pinch of salt

For the cookie mixture:

  • 60g softened butter
  • 50g sugar
  • 1 egg yolk
  • 90g flour
  • ½ teaspoon baking soda
  • 70g chocolate chips
  • A small pinch of salt

Let’s make browkies

Start by heating the oven to 180°C and lining a baking tray with parchment paper.

For the brownie layer, melt the chocolate and butter together. Stir in the sugar and egg, then add the flour, cocoa powder, baking powder, and salt. Mix until everything comes together.

For the cookie dough, combine the softened butter and sugar, then mix in the egg yolk. Add the flour, baking soda, and salt before folding in the chocolate chips.

Now comes the fun part. Take a little brownie mixture and a little cookie dough and place them together on the baking tray. Gently swirl them for a marbled look or simply leave the two layers slightly messy. Because honestly, the mess is part of the charm.

Bake for 10 to 12 minutes. The edges should be set while the centers still look slightly soft. Resist the urge to keep baking them. They will continue to firm up as they cool.

Let them rest for around 10 minutes, then grab one while it is still slightly warm.

The only difficult part

Surprisignly, the hardest part comes at the very end: trying to save some for later. Well, good luck with that!

Serve your browkies with coffee, hot chocolate, vanilla ice cream, or absolutely nothing at all. They already contain enough chocolate to qualify as a small personality trait.
