Rabat — What happens when Moroccan pastilla becomes a crispy cone, or traditional khlii finds its way into a taco?
At Sânuj, the Moroccan restaurant inside the Rabat Marriott Hotel, familiar recipes take on unexpected forms without abandoning their traditional flavors.
The restaurant held its formal inauguration on November 5, celebrating a concept that connects contemporary gastronomy with Moroccan culinary memories and craftsmanship.
Its name comes from sanouj, the black nigella seed commonly used in Moroccan households.

Developed by MADAËF Brand Factory, the restaurant organizes its culinary offering around two approaches: inventive Moroccan tapas and traditional dishes inspired by recipes passed down through generations.
Moroccan classics with a creative twist
Among the distinctive creations featured on the menu shared for the inauguration are chicken pastilla served in a crispy cone and tacos filled with khlii, Morocco’s traditional preserved meat.

The selection also includes lamb bites and bite-sized interpretations of vegetable tagine.
These smaller preparations introduce recognizable Moroccan flavors through contemporary formats designed for sharing.

They reflect the restaurant’s approach to traditional cooking, which combines familiar ingredients with alternative textures and presentations.
Alongside the smaller creations, Sânuj offers what its culinary concept describes as dishes rooted in memory.
These emphasize slow cooking, rich sauces, regional spices, and the sweet-and-savory combinations associated with Moroccan cuisine.
For Chef de Cuisine Islam Takraoud, however, the restaurant’s ambition goes beyond presentation.

Speaking to Lifestyle Magazine, he highlighted traditional favorites including meat tagine with prunes, chicken tagine, seafood pastilla, chicken pastilla, vegetable tagine, and mrouzia.

“When you visit Sânuj, you’ll feel as though you’ve stepped into your grandmother’s home,” Takraoud told Lifestyle Magazine. “All those flavors from your childhood will come rushing back.”

Moroccan craftsmanship throughout the interiors
Sânuj extends its culinary identity into its interior design.

Amber and golden zellige tiles appear alongside carved wood, brass lanterns, and traditional moucharabiehs.

The space also features marble, Moroccan carpets, and a coffered ceiling finished in Fassi-green tones.
These materials connect the restaurant’s contemporary setting with decorative traditions found throughout Moroccan architecture.
An experience beyond the table
The restaurant also incorporates artistic performances into its wider concept.

Its announced programming includes oud music, singing, theatrical interventions, and poetry, with Saloua Regragui overseeing the poetic component.
The combination of food, design, and performance reflects Sânuj’s aim to present Moroccan culinary heritage as a living cultural experience.
Located in Rabat’s Agdal district, the restaurant operates daily from noon to 11 p.m., according to the Rabat Marriott Hotel’s official dining information.
