It’s no secret that Moroccan cuisine is among the best in the world. In this hot weather, nothing beats a succulent and refreshing bowl of Sekok Belboula. 

Indeed, not only will this delicious dish please the large majority of those who will try it, it is one of the best ways to eat while quenching your thirst in this period of abnormally high temperatures.

Ingredients

250g barley couscous semolina

1/2L of whey (Lben)

1 tablespoon crystal sugar

The preparation of this dish lies in cooking the semolina.

Put the semolina in a large oiled and salted wide dish.

Once the steam crosses the semolina of barley, put it back in a bowl, pour a little warm water, mix and separate the grains by hand or with a ladle, as you prefer.

It will then be necessary to cook the semolina of barley a second time for 30 minutes. And finally for a third time. And to finish, place the cold couscous in a large dish, pour over the cold whey and enjoy (you can add sugar).
