One chef embarks on a culinary journey through Morocco’s best-kept secrets. 

Fez — On March 29, France 5’s beloved travel show “Échappées Belles” took viewers on a flavorful journey through Morocco, a country whose cuisine continues to captivate the world. 

This special episode followed chef Anto Cocagne as she immersed herself in Morocco’s rich culinary heritage, uncovering the secrets behind its globally celebrated dishes.

Morocco, Africa’s top tourist destination, has long been praised for its diverse food culture. 

Recently, Pubity, a social media page with over 40 million users, crowned Moroccan cuisine the best in the world, a title that comes as no surprise to those familiar with its irresistible flavors. 

From Marrakech to Fez, Casablanca to Oualidia, and even deep into the Atlas Mountains, Chef Cocagne embarked on a delicious expedition to experience Morocco’s most iconic dishes firsthand.

Her journey was a feast for the senses. She indulged in the dishes that Morocco has become known for: traditional tagines, fragrant couscous, and the delicate layers of the sweet-and-savory pastilla. 

She explored lesser-known delicacies:slow-roasted “mechoui” prepared in a clay oven and “babbouch” a unique Moroccan take on escargots, a dish infused with cinnamon, anise, and thyme. 

Of course, no Moroccan culinary adventure would be complete without sampling the country’s exquisite pastries, which transform almonds, honey, and orange blossom water into edible poetry.

Along the way, Chef Cocagne met the unsung heroes of Moroccan gastronomy. 

In Aït Bouguemez valley, she spent time with shepherds living and cooking in harmony with nature. 

In the coastal town of Oualidia, she connected with the fearless women making waves (literally) by venturing into the region’s male-dominated fishing industry. 

Each of these encounters strengthened the deep-rooted traditions and evolving stories related to Morocco’s food culture.
