Rabat – Rich, creamy, and beautifully caramelized on top, Basque burnt cheesecake has become one of the world’s most beloved desserts.
Despite its dark, almost burnt appearance, the cake is intentionally baked at a high temperature to create a deep caramelized flavor while keeping the center irresistibly soft and creamy.
Unlike traditional cheesecakes that require a water bath and a perfectly smooth finish, this Spanish-inspired dessert embraces imperfections. Its rustic look is part of its charm, making it one of the easiest impressive desserts to recreate at home.

Allow the cheesecake to cool completely before refrigerating for at least four hours, preferably overnight.
How to serve
Serve chilled or at room temperature with fresh berries, a drizzle of salted caramel, or simply dusted with powdered sugar.
A cup of coffee or mint tea would make the perfect accompaniment.
Bonus tips
Bring all ingredients to room temperature before mixing.
Do not worry if the cheesecake cracks or rises during baking. Its the signature appearance.
The center should remain slightly jiggly when removed from the oven, as it will continue to set while cooling.
Refrigerating overnight enhances both the texture and flavor.
