Rabat – If you’ve been seeing people open a bag of Doritos, fill it with seasoned meat, cheese and toppings, then eat the whole thing with a fork, you’ve met the Walking Taco.
The idea is simple: the chip bag becomes your bowl. Walking Tacos traditionally use individual bags of nacho-flavored Doritos, seasoned ground beef and taco toppings such as lettuce, tomato, cheese, and sour cream.
And you don’t need hard-to-find ingredients to make one in Morocco. Here’s a version using ingredients you can easily find at supermarkets and local grocery stores.
Ingredients
- 1 small bag of Doritos
- 125 g ground beef
- ¼ small onion
- ¼ tsp paprika
- A pinch of cumin
- A pinch of garlic powder
- A pinch of black pepper
- Salt, to taste
- 1 tsp tomato paste
- 2 tbsp water
- ¼ cup grated cheese
- ½ tomato, diced
- A small handful of lettuce
- 1-2 tbsp sour cream or crème fraîche
- 1-2 tbsp salsa or a little harissa
How to make walking tacos
Make the meat:
- Heat a little oil in a pan and sauté the chopped onion until soft.
- Add the ground beef and cook, breaking it apart with a wooden spoon, until browned. Add the paprika, cumin, garlic, black pepper and salt.
- Stir in the tomato paste and water, then let everything simmer for a few minutes until the meat is juicy but not watery.
Prepare your Doritos bag
This is where the Walking Taco gets its signature look.
Don’t open the bag from the top yet. Gently crush the Doritos inside the unopened bag, just enough to break them into smaller pieces without turning them into crumbs.
Then cut the bag open along one side, creating a larger opening. This makes it easier to add the toppings and eat directly from the bag.
Load it up
Add a few spoonfuls of the hot seasoned beef directly into the Doritos bag.
Then layer on:
Cheese → lettuce → tomato → sour cream → salsa or harissa.
Add jalapeños or avocado if you have them.
Mix and eat
Grab a fork and gently mix everything together inside the bag, making sure the melted cheese, seasoned meat and toppings coat the crunchy Doritos.
And that’s your Walking Taco.
A Moroccan twist
If you want to make it feel a little more local, swap the taco seasoning you often see in American recipes for paprika, cumin, garlic, black pepper, and a touch of harissa.
The basic concept stays the same, but the flavors become much easier to recreate with ingredients already sitting in a Moroccan kitchen.
The original Walking Taco is highly customizable, so there’s really no wrong way to build one.
