With tender chicken pieces simmered in a spiced, creamy sauce, it’s an ideal choice for family dinners, cozy evenings, or a satisfying weekend meal.
Whether served with rice, flatbread, or enjoyed on its own, chicken curry is simple to prepare and always deeply satisfying.
Ingredients
500-700 g chicken (boneless or bone-in), cut into pieces
1 large onion, finely chopped
3-4 garlic cloves, minced
1 tablespoon ginger, grated
2-3 tablespoons oil or ghee
2 tablespoons curry powder or curry spice blend
1 teaspoon turmeric
1 teaspoon paprika (optional)
1-2 tomatoes, chopped or 200 ml crushed tomatoes
200-300 ml coconut milk or cooking cream (optional)
200 ml chicken broth or water
Salt and black pepper to taste
Fresh coriander (cilantro) for garnish
A squeeze of lemon juice (optional, for brightness)
Instructions
Heat oil or butter in a large pot over medium heat.
Add chopped onion and sauté until soft and golden.
Stir in garlic and ginger, cooking until fragrant.
Add the chicken pieces and cook until lightly browned on all sides.
Sprinkle in curry powder, turmeric, and paprika, stirring well to coat the chicken evenly.
Add chopped tomatoes and cook until they break down into a thick sauce.
Pour in the chicken broth and stir to combine.
Bring to a gentle simmer and cook for 20–25 minutes until the chicken is tender and the sauce thickens.
Stir in coconut milk or cream for a richer, smoother curry.
Season with salt and black pepper, adjusting to taste.
Let it simmer for another 5–10 minutes to deepen the flavours.
Finish with fresh coriander and a squeeze of lemon juice if desired.
Serve hot with rice, naan, or flatbread.
