Rabat – The no-bake Moroccan-inspired date rolls are proof that healthy snacks don’t have to be boring.
Naturally sweet, chewy, and packed with toasted nuts, Made with dates, cinnamon, crunchy nuts, and a touch of dark chocolate, they roll into a sliceable log that holds together and is easy to slice.
Perfect for suhoor, tea time or iftar for a clean energy boost during the day and completely free from refined sugar.
Ingredients (Base Mixture)
- 250 g (about 16) dates, pitted
- 40 g almonds, chopped
- 40 g pistachios, chopped
- 25 g walnuts, chopped
- 25 g peanuts, chopped
- 20 g desiccated coconut
- 30–50 g dark chocolate (70% cocoa recommended), chopped
- ¼ tsp ground cinnamon
For coating
3–4 Tbsp of any of the following:
- Toasted sesame seeds
- Finely chopped pistachios
- Crushed almonds or mixed nuts
- Desiccated coconut
- Dried edible rose petals (lightly crushed)
You can also mix two coatings for a decorative finish.
Instructions
- Prepare the nuts: Chop the almonds into small pieces. Chop the other nuts a little if needed. Keep the texture, don’t turn them into powder.
- Toast for deeper flavor: In a dry pan over low-medium heat, toast the nuts and coconut until light brown and smelling nice. Stir often so they don’t burn. Let them cool. Toast sesame seeds separately until light brown. Put them aside.
- Make the date paste: In a food processor, blend the dates and cinnamon until smooth and sticky. If it is too dry, add 1–2 tablespoons of warm water little by little.
- Mix everything: Put the date paste in a bowl. Add the toasted nuts, coconut, and chocolate. Mix well.
- Shape into a roll: Put the mixture on parchment paper. Press and roll it into a log about 4–5 cm thick.
- Coat: Roll the log in toasted sesame seeds or any coating preferences from above, pressing gently so they adhere evenly.
- Chill and slice: Wrap tightly and refrigerate 1–2 hours until firm. Slice into rounds or bars.
Tips and variations
- Extra chewy texture: Use very soft dates.
- Richer flavor: Increase dark chocolate to 50 g.
- Decorative topping: Coat in crushed pistachios or coconut instead of sesame.
- Cleaner slices: Chill overnight before cutting.
Serving and storage
Serve with cold/hot drinks or as a post-workout snack.
Let it cool in the fridge before cutting. Store in an airtight container in the fridge for 4–5 days.
