Fez — Evok Collection has appointed Adam Bentalha as its Group Executive Chef, handing him oversight of the kitchens across the group’s properties in France, Spain, and Italy, as well as upcoming openings. 

The promotion formalizes a broader leadership role for Bentalha, who has been working with the group since 2018 and has already contributed to the culinary identity of several Evok addresses, including Brach Paris, Brach Madrid, Sinner, and Cour des Vosges.

The appointment signals the importance Evok now places on gastronomy as a central part of its European expansion strategy. 

The group said Bentalha’s mission is not simply to standardize menus, but to guide a common culinary direction while preserving the distinct personality of each property.

Bentalha is not a new face inside the group. He previously served as executive chef for the Brach and Sinner brand universe, after building experience in major Parisian kitchens such as the Ritz, Shangri-La, Royal Monceau, Prince de Galles, and Lausanne’s Royal Savoy. 

Evok’s own brand and restaurant pages consistently present his cooking as generous, seasonal, and Mediterranean in spirit, with influences that also draw from the East.

A bigger culinary brief across Europe

In practical terms, the new role places Bentalha at the center of Evok’s culinary development as the company continues to grow beyond Paris. 

Evok is a luxury hospitality group developing destination properties under the Nolinski and Brach brands, with current or announced footprints spanning Paris, Madrid, Venice, and future projects in Rome and Gassin near Saint-Tropez.

That wider scope matters because Evok’s hotels are marketed less as traditional hotel properties and more as lifestyle destinations where food is part of the identity of the place. 

Bentalha’s promotion suggests the group wants a stronger culinary thread linking those destinations, especially as it expands into additional markets.

In comments carried by the announcement, Bentalha said “My role is to support each address in expressing its own singularity, while building a coherent and living overall vision. At Evok Collection, gastronomy is conceived as an experience in its own right, connected to places, cultures and the energies that run through them.” 

That language fits Evok’s broader positioning, which emphasizes atmosphere, culture, and local character as much as luxury itself.
